Join Reviving Real Foods ranchers Kyle and Megan LaPointe for a full cow-to-table experience, including a milking demonstration and cheesemaking class on Saturday, January 20, 2024. Because you’re coming amid a baby boom on the ranch, you’ll also get a chance to see baby lambs and goats. Reviving Real Foods Ranch in Bowie is one of DFW’s most popular market vendors, and is known for their regenerative methods and high-quality meat, dairy and eggs. There are only 12 spots available in this workshop, and it uses raw milk, as sold from point of production under Texas law.
This hands-on experience is for ages 12 and up and ideal for adventuresome foodies seeking the story and process behind local food. It is also appropriate for families looking to make memories together, homesteaders learning about small-scale production, or anyone curious about the people and animals who make your favorite fromage. A kid camp is also available for younger members for $25/child, including a variety of fun on the farm while parents or caregivers are learning how to make cheese (more details below).
The experience starts at 2 pm with a brief introduction and a milking demonstration with the farm’s mini Jersey cows and Nigerian dwarf goats. See the milking process in action, and learn how why the ranch chose these breeds for top quality milk and cheese. You will also see what is required to clean and sterilize milking equipment. Ask your questions, pet animals, and share an afternoon snack in the country air.
Next, the group will begin the cheese-making class, which will produce mozzarella and ricotta, and include a sampling of mozzarella for each person. The session will start with an overview of cheesemaking and the required equipment and supplies. Participants will then walk through the go through a step by step process of making the cheese by hand from scratch. By the end of the class you will have fresh mozzarrella and ricotta under the direction of a master cheesemaker with opportunities for hands-on work by the class. The class aims to prepare you to make cheeses at your home, so bring a notebook and take notes as the class proceeds. An optional take-home kit is also available with the basics to get you started making cheese at home.
Local wine and the ranch’s famous soups will be available for purchase. You’ll also see the ranch’s newly permitted Texas Foothills Distillery and hear a bit about their journey into producing sustainable beer, wine and spirits.
